Even before you get inside the door of this decidedly fashionable eateries, there are very pleasant choices to be made. Will you take a seat outside, with a view into the busy kitchen and a servery packed with taste-tempting dishes? Or, does that communal table inside look like the place to savour a coffee – and will that be either the house blend or single origin beans?

Pillar of Salt is all about collaboration. One of the best eateries in not just Richmond, but also Melbourne, they collaborate with local Melbourne roaster Five Senses Coffee to deliver what they hope is the very best cup of coffee you’ll ever taste. They also collaborate with food suppliers, emphasising ethical production and sustainability.

If that sounds a bit too serious, nope: this place hums with life. They want it to be both a destination café and still retain the friendliness that makes it the haunt of locals. 381 Cremorne guests will notice how welcome you are made to feel, so if you head there for a coffee or make this your lunch destination, it’s going to feel right.

If you’re visiting in the warmer weather, you might try the garden room out back, but it’s very well set up if you hit one of those changeable days when it’s a bit brisk in the laneways and byways of Richmond.

The menu at Pillar of Salt is full of surprises (what do you reckon about “15th century Turkish Cilbir Eggs”) as you’d expect in a restaurant that prides itself on innovation. There’s plenty to please at this lively eatery, a short walk from Richmond’s newest and most stylish boutique accommodation.
